Preparation

1. Preheat the oven to 200°C (400°F).

2. Wash the carrots and cut them in half lengthwise.

3. Place the carrots in an ovenproof dish.

4. Season with paprika, salt, and pepper.

5. Brush with olive oil and drizzle with 1 tablespoon of honey.

6. Roast for about 30 minutes, until the carrots are tender and nicely caramelized.

7. Roughly chop a handful of pistachios and sprinkle over the carrots just before serving.
