1 whole free-range chicken
3–4 sprigs fresh rosemary
1 lemon
4 garlic cloves
3 tbsp olive oil

Préparation
1. Preheat the oven to 200°C (400°F).
2. Stuff the chicken cavity with a few sprigs of rosemary, crushed garlic cloves, and half a lemon.
3. Rub the chicken all over with olive oil.
4. Sprinkle rosemary leaves on top.
5. Place the chicken in an ovenproof dish.
6. Roast for 1h15 to 1h30, basting regularly with its cooking juices.
7. Check for doneness.
8. Remove from the oven, cover with foil, and let rest for 10 minutes before carving.
