– 16 sponge finger biscuits – 250 g of strawberries – 250 g of mascarpone cheese – 60 g of sugar – 2 eggs – 2 tablespoons of strawberry syrup or coulis
1. Wash and dry the strawberries and cut them into slices. 2. In a bowl, whisk the egg yolks with the sugar. 3. Add the mascarpone cheese and mix well. 4. In a separate bowl, whisk the egg whites until stiff. 5. Fold them into the previous mixture of egg yolks, sugar and mascarpone cheese. 6. Use a mixing glass bowl to mix the syrup with a little water. 7. Dip the biscuits quickly in the syrup and place half of them in your dish. 8. Spread a layer of mixture over the soaked sponge fingers then add a layer of strawberries and the rest of the biscuits. 9. Continue layering, finishing with a layer of cream and decorate with strawberries. 10. Cover and place in the fridge for at least 3 hours.
